Green garlic stems are available to pre-order each spring. This year we’re making our superb purple stripe garlic bulbs available green. As it is picked a month early, the bulbs are not fully developed. You can eat the cloves and the stems.
Uses
Try using green garlic cloves and stems:
- chopped and added to stir-fries in the same way you would use spring onions
- in salsa verde or pesto.
Availability
This produce is available for 4 weeks only, in November each year. Your order will be harvested on request so pre-order to ensure you don’t miss out.
Storage for Green Garlic Stems
Short (up to 3 months in cool, dry conditions). If you want it to stay green, green garlic is best kept in the fridge where it will last 2-3 weeks. Out of the fridge it will dry like regular garlic but the cloves won’t be as defined and the overall bulb may be smaller so it won’t last as long as fully developed and cured garlic. It is still a wonderful product for specific uses!

Dunganski varietal information
Naturally grown from organic seed from the Dunganski variety, which is a cultivar of the Standard Purple Stripe group. The Dunganskis grown in Australia were originally sourced from from a bazaar in Samarkand Uzbekistan.

All our garlic and shallot bulbs, whilst not yet certified organic, are grown naturally, without the use of chemical fertilisers or pesticides. We use biodegradeable weed matting and hand weeding methods of weed control, and only organic fertilisers.
